Histamine intolerance (HIT), also known as intestinal histaminosis or sensitivity to histamine in food, is an undesirable reaction to foods which does not involve the reaction of the immune system. So it is not an allergy. A reduced ability to break down histamine in the (small) intestine is considered its cause.

For a long time, HIT was not identified; it was defined only at the beginning of the 21st century. As the main cause leading to histamine intolerance is considered the lack of a specific enzyme in the intestine – diaminooxidase (DAO).

DAO is the main enzyme responsible for processing the histamine ingested in food. An insufficient activity of the DAO enzyme can be of genetic, pathological or pharmacological origin. As a result of the lack of DAO or its insufficient activity in sensitive persons, histamine accumulate in the blood. A buildup of histamine in the blood leads to a variety of manifestations. HIT symptoms for the most part are of a transient (temporary) character. The activity of the DAO enzyme may be progressively restored after a certain time. The sensitive person should monitor what foods in what amount they can tolerate without exhibiting symptoms.

Among therapeutic approaches, the gold standard is a low-histamine diet. Alongside the dietary measures, DAO supplementation supporting the degradation of ingested histamine may be considered as subsidiary treatment for individuals with intestinal DAO deficiency and/or HIT.
